Overview
Music garlic is one of the most popular hardneck garlic varieties for northern and mountain climates, prized for its large bulbs, impressive clove size, and bold, true garlic flavor. This Porcelain variety consistently produces hefty bulbs with just a few extra-large cloves that are easy to peel and perfect for the kitchen. Music offers a strong, spicy flavor when raw that mellows into a rich, buttery sweetness when cooked. Cold hardy, dependable, and high yielding, it's an excellent choice for both home gardeners and market growers.
Characteristics
- Type: Hardneck, Porcelain variety
- Flavor: Bold, rich garlic flavor with moderate heat that becomes sweet and creamy when roasted
- Size: Very large bulbs with 4–7 extra-large cloves each
- Color: Bright white wrappers with creamy white cloves, often accented by light pink or purple clove skins
- Storage Time: Approximately 6–8 months
Growing Tips
Planting: Plant in fall about 4–6 weeks before the ground freezes. Separate bulbs into individual cloves and plant each clove 2–3 inches deep with the pointed end facing up, spacing cloves 6–8 inches apart in fertile, well-drained soil.
Sunlight: Requires full sun for optimal growth.
Watering & Care: Keep the soil consistently moist throughout the growing season without becoming waterlogged. Mulch after planting to conserve moisture, insulate the soil through winter, and suppress weeds. Garlic does not compete well with weeds, so maintain clean beds for the best bulb development.
Fertilization: Garlic is a heavy feeder and benefits from fertile soil. Apply a balanced organic fertilizer at planting and side-dress with additional nitrogen in early spring to encourage vigorous growth and large, healthy bulbs.
Harvesting Tips
Timing: Harvest in mid-summer when the lower leaves have turned brown while several upper leaves remain green. If possible, harvest after a stretch of dry weather and before extended rainfall to reduce the chance of bulb staining or mold.
Process: Carefully loosen the soil with a garden fork and lift the bulbs without damaging them. Remove the flower stalks (scapes) in late spring to direct the plant's energy into producing larger bulbs. Scapes are edible and excellent in pestos, stir-fries, and grilling.
Storage: Cure bulbs in a dry, shaded, well-ventilated area for 3–4 weeks. Once fully cured, trim the roots and stalks and store in a cool, dark place with good air circulation. Music typically stores well for 6–8 months while maintaining excellent flavor and quality.
