Originally discovered on the Colville Indian Reservation near Inchelium, Washington, this Artichoke-type garlic produces large, attractive bulbs packed with numerous easy-to-use cloves. Its smooth, mellow flavor becomes sweet and buttery when roasted while still offering plenty of classic garlic character in fresh dishes. Inchelium Red is an excellent choice for gardeners looking for a reliable, high-yielding garlic that stores beautifully for months after harvest.

Planting: Plant in fall about 4–6 weeks before the ground freezes. Separate bulbs into individual cloves and plant each clove 2–3 inches deep with the pointed end facing up, spacing cloves 6–8 inches apart in fertile, well-drained soil.

Sunlight: Full sun (6–8+ hours daily).

Watering & Care: Keep soil evenly moist throughout the growing season but avoid waterlogged conditions. Apply mulch after planting to conserve moisture, suppress weeds, and protect cloves through winter. Garlic does not compete well with weeds, so keeping beds clean is essential for producing large bulbs.

Fertilization: Garlic is a heavy feeder and responds well to fertile soil. Apply a balanced organic fertilizer at planting and side-dress with additional nitrogen in early spring to encourage vigorous growth and larger bulbs.

Harvesting Tips

Timing: Harvest in early to mid-summer when the bottom third to half of the leaves have turned brown while several upper leaves remain green. If heavy rains are forecast near harvest, lifting bulbs a little early can help reduce the risk of rot and staining.

Process: Loosen the soil with a garden fork and gently lift the bulbs, taking care not to bruise or damage them. Leave the stalks and roots attached while curing.

Storage: Cure bulbs in a dry, shaded, well-ventilated location for 3–4 weeks. Once fully cured, trim the roots and stalks and store bulbs in a cool, dry place with good airflow. Properly cured Inchelium Red commonly stores for up to 10 months.
