Persimmon (Asian), Fuyu (Diospyros kaki ‘Fuyu’)
Fuyu is the most popular and widely grown non-astringent Asian persimmon, known for its crisp texture, rich sweetness, and ability to be eaten fresh while still firm. Unlike astringent varieties, Fuyu doesn’t require softening before eating, making it perfect for slicing into salads, drying, or snacking right off the tree. The fruit ripens in late fall, offering brilliant orange skin, squat, tomato-shaped fruit, and a honeyed, mild flavor.
Hardy in USDA Zones 7–10, Fuyu is self-fertile, compact, and highly productive, often bearing large crops even on young trees. Its glossy, deep green foliage turns fiery shades of orange and red in autumn, providing ornamental value even after the leaves fall and the fruit clings to the bare branches. With its late-season harvest, Fuyu fills an important niche in succession planting, extending fresh fruit availability into the colder months. A beautiful and functional addition to food forests, backyard orchards, and permaculture designs in warmer zones.
Key Characteristics
-
Non-astringent fruit, edible while firm
Fuyu is one of the few persimmons you can eat crisp. It’s sweet, seedless, and flavorful right off the tree — no softening or waiting required. -
Late fall harvest extends fruit season
Ripening in October to November, Fuyu provides fresh fruit after most orchard crops are finished. It stores well and brings bright color and sweetness to the late-season kitchen. -
Self-fertile and productive
Fuyu doesn't need a second tree to produce fruit, making it ideal for small spaces or solo plantings. Consistent yields even in less-than-perfect soils and with minimal care. -
Edible and ornamental in one tree
With glossy leaves, vibrant fall color, and bright orange fruit that hangs on the tree into winter, Fuyu is as beautiful as it is delicious. -
Ideal for regenerative planting systems in warm zones
Excellent for integrating into food forests, edible hedgerows, and backyard orchards in warmer climates. Works well in mixed layers and supports seasonal diversity in harvest planning.
